Gluten-Free Pie Crust

Recently a number of people have asked me for a gluten-free pie crust. Although I’ve tried gluten-free crusts a couple of times, in all honesty I don’t know enough about gluten-free baking to come up with my own recipe. Until I do, here is what I think is an excellent recipe. I’m just going to link to it because it really does a great job of explaining the difference between a regular and gluten-free crust. In my experience, they do act very differently and the gluten-free crust is a bit more “shortbread” like than a regular crust.

You can substitute this or any gluten-free crust wherever I call for a pastry crust: Art of Gluten-Free Baking: Pie Crust, Gluten-Free.
